Green pasta. 

Today I made a quick and easy meal: green pasta! I did what I love to do.. improvise and think creatively with the ingredients I already have! I improvised while cooking this time and it actually turned out delicious. It’s free of any animal products or E-numbers!


To increase the nutritional value, you can ofcourse choose to go organic! It has only a few ingredients, so here we go:

– 100 gram of pasta (I used penne, I live how the sauce can fill up inside)

– 1 green bell pepper

– 2 spring onions

– 50 ml coconut milk

– 50 gram of pine nuts

– 2 tablespoons of green pesto

– olive oil

Cook the pasta al dente within 8 minutes (use salt in your water). Cut the bell pepper and spring onion into little squares and put aside. Place a pan on the stove and turn to medium heat. Dry roast the pine nuts untill they start to change colour into slightly brown. When they’re done, take them out and put them aside.

Put a few drops of olive oil into that same pan. Add the bell pepper and spring onions in the pan and stirr for about a minute. Add the coconut milk and pesto and combine well. If it’s all incorporated, add the precooked pasta. Mix well together.
Time to plate up now! Gently let your pasta glide out of the pan and onto your place. Sprinkle the roasted pine nuts from a hight. Bon appétit!
